The Origins: A Tradition Passed Through Generations
The story of Wensleydale cheese began in 1150, when French Cistercian monks settled in the region and introduced their centuries-old cheesemaking methods. Over time, the tradition was passed on to local farmers' wives, ensuring the craft remained alive even after the Dissolution of the Monasteries (1536–1540) under Henry VIII.
The Birth of the Creamery
In 1897, Edward Chapman, a local corn and provisions merchant, took Wensleydale cheesemaking to the next level by establishing the first commercial creamery in Hawes. This step marked the beginning of large-scale production while maintaining the artisanal quality that defines Wensleydale cheese to this day.
